Psari Plaki (Baked Fish)

2 to fishplaki3 lbs whole fish (snapper or sea bass)
Salt and Pepper
6 to 8 whole green onions, chopped
2 cloves garlic, crushed
1/2 cup olive oil
1/2 cup dry white wine
1/2 cup water
3 medium tomatoes, chopped
3/4 cup chopped fresh parsley
3 tablespoons minced fresh dill
Bread Crumbs
Lemon Slices

Salt and pepper fish, set aside. Saute onions and garlic in hot oil until tender. Add wine, water, tomatoes, parsley, and dill; sauté until liquid is absorbed. Place fish in large greased baking pan. Score flesh of fish to the bone at 2-inch intervals. Pour sautéed vegetables over top. Sprinkle with bread crumbs; garnish with lemon slices. Add ¾ cup water to pan; bake at 350 degrees for 45 to 60 minutes or until fish flakes with a fork. Baste often. Serve hot or warm, with rice, bulgur, or potatoes.
